Tuna Patties from the Lean Bodies Cookbook
Quick and easy Two 7-Ounce cans water
packed albacore tuna , drained 1/2 cup finely chopped onion 1/3 cup finely chopped
celery 1/2 cup old fashioned oatmeal 1/2 cup oat bran 2 egg whites, beaten 2 tbsp. lemon juice 2
tbsp. chopped fresh cilantro (or parsley) 1 tsp. dill weed 1 tsp. salt free herb seasoning 1/4 cup oat flour (opt.) You can substitute with corn meal for extra crunch. Preheat oven to 375 degrees. In a large bowl, combine all ingredients except flour. Mix well. Shape into 8 patties.
Dust lightly with oat flour or corn meal. Spray cookie sheet with nonstick cooking spray. place tuna patties on a cookie sheet.
Bake for 15 minutes. Turn patties. Bake for 10 minutes until browned. Serves 4. You may substitute cilantro for the parsley and corn meal for the oat flour
