Basic Oatmeal Pancakes


2 1/2 cups of old-fashioned oatmeal, uncooked

6 egg whites

1 cup skim milk

1 tbsp. safflower oil

1 tsp. baking powder

1 tsp. vanilla

Place all ingredients in a blender. Blend 15 to 20 seconds, until smooth. Lightly spray griddle or electric skillet with non stick cooking spray. heat until hot. For each pancake pour 1/4 cup batter onto griddle. Cook pancakes until edges are dry and bubbles appear on top. Turn and brown other side. Makes 12 pancakes. serves 2.

For a healthy and delicious alternative to maple syrup and butter, try cooking up your favorite fruits into a compote.


This is my recipe for a delicious and healthy topping for pancakes.


Example-put a small amount of fruit juice into a pan and add a combination of fruits, blueberries, raspberries, bananas chopped a little lemon peel and some spices such as cinnamon or nutmeg. Steam the fruit until soft and put over your pancakes.


Lorelie's Mock Fried Chicken


Chicken breast cut into strips

Egg whites beaten with a touch of water

Seasoned bread crumbs or flour

Salt and pepper

Frying pan that has been sprayed with cooking oil

While pan is heating up dip the cut up chicken one at a time in to the egg white mixture, followed by a dip into the bread crumbs or flour, place the chicken into the pan and continue dipping the rest of the pieces.

Cook until done about 7- 10 minutes longer for larger pieces.

Season with salt and pepper

Serve over rice with lots of vegetables or a salad.

Jenni's Tabouleh

Bring one cup of water to a boil, add one cup uncooked tricolored couscous ** and remove from heat and cover. Let stand 5 minutes. Then fluff and refrigerate while you prepare the rest.

Veggies

½ Cucumber - skin on, diced

2 Tomatoes - med diced

½ bunch Cilantro - chopped about ¼ cup

½ bunch green onions - chopped


Sauce

¼ cup lemon juice

1T Olive Oil (optional)

1 tsp Black Pepper

½ tsp salt (optional)

½ tsp garlic powder (or use fresh garlic)

Mix the sauce together


Take cooled couscous and fluff again, stir in all other vegetables, then pour sauce over and mix. Refrigerate over night or eat immediately.

** I use tricolored couscous from Rice Select...comes in a big square clear plastic jar with an orange lid. Costs a lot...but it works out to $1 or $2 dollars a meal...makes a lot.

French Toast


2 egg whites beaten with a touch of water and cinnamon, nutmeg or ginger or all three.

2 pieces of whole wheat bread, cornbread, leftover stale bread of any kind.

Spray pan with Pam or other spray oil.

Dip bread into egg mixture.

Put bread onto pan that has been heated up.

Pour extra egg white mixture over the top of the bread. Let cook until browned on one side and than flip to other side.

Top with fresh or cooked fruit and a drizzle of maple syrup. Being careful no to put too much syrup on.

Or just top with fruit and yogurt, chopped walnuts, or pecans,

Tuna Patties from the Lean Bodies Cookbook

Quick and easy

Two 7-Ounce cans water packed albacore tuna , drained

1/2 cup finely chopped onion

1/3 cup finely chopped celery

1/2 cup old fashioned oatmeal

1/2 cup oat bran

2 egg whites, beaten

2 tbsp. lemon juice

2 tbsp. chopped fresh cilantro (or parsley)

1 tsp. dill weed

1 tsp. salt free herb seasoning

1/4 cup oat flour (opt.) You can substitute with corn meal for extra crunch.

Preheat oven to 375 degrees. In a large bowl, combine all ingredients except flour. Mix well. Shape into 8 patties. Dust lightly with oat flour or corn meal. Spray cookie sheet with nonstick cooking spray. place tuna patties on a cookie sheet. Bake for 15 minutes. Turn patties. Bake for 10 minutes until browned. Serves 4.

You may substitute cilantro for the parsley and corn meal for the oat flour
